Moroccan Chickpea Stew

This is a great favourite here at Cotna, easy to cook & you can adapt it with different seasonal green veg or adding veggie sausages or tofu – our favourite is those Taifan frankfurters to add to the smokiness, while the honey, lemon & tahini at the end give it a lovely deep flavour.

Ingredients

1 onion, thinly sliced

3 cloves garlic, chopped

2 tbs olive oil

1 tsp ground cumin

1 tsp ground coriander

1-2 tsp smoked paprika

1/4 tsp chilli powder

1 tin tomatoes or passata

Handful of dried apricots, chopped

1 tin chickpeas

Pack of  veggie sausages or tofu, cut in chunks

50 – 100g kale or spinach

1 tbs honey

1 tbs tahini paste

Juice of 1 lemon

Handful of coriander leaves (if you have any)

Method

Fry up the onion in olive oil, add garlic halfway through. Once transparent, add sausage chunks, cook a little longer. Then add cumin, coriander, chilli & smoked paprika. Stir & cook for 2 mins then add chickpeas, tomato & apricots. Continue cooking for 10 – 15 minutes then add kale. Cook for another 5 minutes then add honey, tahini & lemon juice with a little extra water if needed. Heat & serve with copped coriander on top, along with couscous, polenta or rice & maybe a green salad.
